For many, the idea of a ‘mixed ferm’ brewery might be a farm, with quaint barns, all beer fermented in barrels, with bottles featuring delicate artwork from pieces of nature. This will be correct for some producers, but there are ones that don’t quite fit that image, particularly when it comes to bottle artwork.
In this second part of the two chats I recorded from a very busy London Craft Beer Festival in August 2023, it features a brewery with a really interesting story of how they came to be, where they went via, and what drives them forwards today.

In this episode I talk to Chris from Pastore Brewing & Blending of Waterbeach, just north of Cambridge, in the East of England. They produce wonderful core beers based on a classic European style, alongside more complicated beers, aged in barrels that might have fruit or even grape skins added. We discuss where it all started, and about some of the processes they use to produce their mixed ferm beers, the breweries influence and knowledge of historical European beer styles, and how they balance production of their different beers. Along with brewing these styles as homebrew. Enjoy!
