Coopers have used everything from torches to infrared lamps to toast the inside of barrels. Now, a technique pioneered by the wine industry is making its way into whisky: the use of heated Icelandic magma stone formed by volcanic lava. Itâs said to provide a more consistent toasting than other methods, and Dewarâs is the first to use the technique in whisky. Many craft distilleries that came to life in the early 2010âs are marking their 10th anniversaries, and this weekend, the folks at Ironroot Republic Distilling in Denison, Texas celebrated their anniversary. The Likarish family founded Ironroot Republic after Robert Likarish decided that he didnât want to practice law in his final year of law school, and his brother Jonathan gave up a career designing medical equipment to become Ironroot Republicâs head distiller and blender.
