This week we welcome Michelin star chef Simon Rogan to Table Manners. We recorded this back in September when Simon came round to mum's for a socially distanced Prawn Saganaki and a Simon Rogan Apple Tart. We talk about The Lake District, learning his trade in a Greek restaurant, getting starstruck at Tears For Fears, his farm, where he produces the finest local ingredients for his restaurant L’Enclume and his move away from a sports career!
Now we’re back in a UK lockdown, Simon has launched 'Simon Rogan At Home', which offers nationwide food deliveries - go and support if you can. Now more than ever the hospitality industry needs our help.

No matter your work environment, writing goals and objectives is probably part of your job. Why? There are a few reasons, one of which is that the ASHA Code of Ethics includes several components connecting goals and objectives to effective services. And you can’t have goals and objective without our dear friend, data.
Data is a common thread that weaves itself throughout the crafting, implementation, and analysis of whether or not somebody met their goals and objectives. You need data about what a person can currently do in order to write goals that are achievable and meaningful, you need to collect data to assess the efficacy of your treatment, and data helps you determine whether or not those goals were met.
There are a few guidelines to help us in this goal and objective writing process. Enter the SMART goal. An acronym referring to certain components that should be included within your goal - spoiler alert, there are at least 5 of them.
Come join us as we talk through the components we should consider when writing goals, including how we are going to collect our data. Learn more about SMART goals to find out if they could help make the process of goal writing a bit easier, a bit better, and maybe even a bit more enjoyable.
Learning Outcomes
Identify at least two components of quality measurement and different types of data collection that are relevant to goal writing
Identify at least two necessary considerations prior to beginning to write goals
Label and provide at least one example for each component of a SMART goal

From a naturally green puppy called Pistachio, to a charming and surprising memoir by Matthew McConaughey, this week is your usual mixed bag -- including discussion of the government's abhorrent decision to stop funding free school meals for vulnerable children outside of term time (see a petition you can sign and charities you can donate to, below) and some television that has moved us. Also! A book that made Dolly's week, and Pandora's new favourite podcast.

When most people think speech and language pathology they think of working on articulation in a tiny treatment room. Not only do SLPs do more than articulation, we also do a lot more than face to face service in a sterile / controlled environment. There are many different kinds of service delivery models available to us as clinicians, and yet somehow the “2x30 direct service” (or what have you) has become the “standard” in many work settings. And yet, indirect service is one of the most powerful service delivery models out there. As clinicians it is important for us to remember the different kinds of service delivery models, what components go into service delivery, and what variables we should consider when choosing a service delivery model for our client.
And just wait till we get started on how service delivery impacts workload.
Providing direct service? That contributes to workload
Indirect service? Also contributes to workload.
Writing assessments? Workload.
Insurance? Workload.
Billing? Wrkload.
Prepping up / breaking down / cleaning after a session? Wrkload.
Programming SGDs? Wrk ld.
Bus duty? load.
Loads and loads and loads. Do service delivery models impact our workloads as clinicians and vice versa? You betcha. Should we, as a field, embrace a workload model instead of a caseload model? You. Bet. Cha.
In this episode we review components of service delivery, define direct and indirect service, and discuss how these different variables interact with workload across work settings. Come join us, be our nerdy friends, and have a laugh or two.
This episode is offered for 1 ASHA CMH (equal to .1 ASHA CEU). If you have questions about CEUs or how this works, please see our How It Works or ASHA Professional Development pages.
Learning Outcomes
Identify at least 2 components that are involved in service delivery within common pediatric treatment environments (e.g., schools)
Identify at least 2 differences between direct and indirect service and what factors might indicate a need for each type of service
Describe a workload approach to caseload and identify how service delivery components and variables are likely to impact workload

As you know - mum's chicken soup comes out for the big guns and this week's guest is no exception. Soup was demanded and joyfully served for the brilliant Dawn French to commence an evening of intriguing and confessional conversation.
A fellow foodie, Dawn tells us all about what makes the Cornish pasty, her favourite eating spots in Cornwall, making ‘breakfast cake’ in lockdown and her experience of boarding school dinners and butter. We talk about disastrous auditions, a shared love of Drag race and falling in love. What a delight it was! Check out Dawn's brand new book ‘Because Of You’ that is out now x

The fantastically glamorous Grace Dent arrived in Clapham having already won mum over with her leopard print dress as soon as she step through the door. The broadcaster, author and restaurant critic joined us round the dinner table for mum's delicious harissa meatballs whilst mum and I fawned over her every word.
We heard about her dad’s famous ‘Sketty’, her love of Angel Delight and a drink she describes as ‘Happiness In A Glass’ - a Pina Colada. The Masterchef regular tells us about growing up ‘up north’, her 'sarcastic face', memories of watching the Blackpool illuminations and how she can get into any restaurant she wants... We obviously exchanged numbers and I'm now will happily be her future plus 1.
Her absolutely brilliant and touching memoir ‘Hungry’ is out on October 29th and is available to preorder now.
Here’s the recipe for mum’s Lamb Harissa Meatballs:
1kg minced lamb
2/3 thick slices of bread
300 ml milk
Handful of mint chopped
Handful of parsley chopped
1 tsp dry oregano
Large tsp of cummin
2 cloves of garlic crushed
Grated zest of one lemon
Sauce:
3 cloves of garlic
2 tbsp olive oil
2 cans of tomatoes
10 cherry tomatoes halved
1 tablespoon of harissa
Handful of basil
Soak the slices of bread in milk for a few minutes. Add lamb, herbs, garlic and lemon and mix thoroughly with a fork.
Make small balls of mixture( golf ball size) and put on a large baking tray.
Make sauce by frying garlic, adding all tomatoes and harissa. Cook for 10 minutes. Whilst sauce is cooking, griddle or grill the meatballs until they are browned. Then put in sauce and cook for 20/30 minutes.
Sprinkle chopped basil on top before serving with mashed sweet potato and/or rice
Autumn Courgette & Charred Sweetcorn Salad:
6 small corn on the cob
4 courgettes cut into strips or diagonal
Bag of salad (rocket or ruby chard)
Olive oil
Sherry vinegar
Pepper and salt
100 grams feta
Heat oil in griddle
Griddle then corn on cob until cooked
Then griddle courgette to get nice stripes
Allow to cool
Put bag of salad in bowl
Put courgette on top
Strip the corn from the cob and add to salad.
Add few extra chard leaves on top.
Add sprinkle of salt and pepper
Dash of olive oil and a tablespoon of sherry vinegar
Crumble feta on top
